Mortgages for those on variable incomes

Currently about 80% of my income is bonus or incentive based, while my salary is reasonably low. That being said my income is quite stable on a monthly basis. I've looked into applying for a mortgage but I've been told that banks are reluctant to take much of a bonus into consideration when it comes to loan amounts.

I'm just wondering what do people with similar types of income to me do, or where they go for mortgages? A significant amount of people must have a similar income structure as mine?
