Snow Leopard to El Capitan

I'm trying to decide whether or not to make the jump from Snow Leopard to El Capitan.

Reasons to do it: I've been on Snow Leopard since I got my Mac in 2011 so am missing any new features. For instance I have an Apple TV and would find it useful to airplay from the Mac to the Apple TV.

Reasons not to do it: Snow Leopard has always been nice and stable. The old 'If it aint broke' reason I suppose.

I've backed up my current set up with Time Machine. But the issue I have is that I don't have my install disks any more. I think from Lion? Onwards you could reboot and hold down command+r to restore from Time Machine. But back on Snow Leopard you need the install disk if you want to do a complete restore.

If the install is successful but I find El Capitan sluggish then I guess I can use the command + r to go back to using Snow Leopard? But if something goes wrong in the install and i'm left with the Mac equivalent of the blue screen of death I'm not sure what the next steps would be.

So I guess I'm looking for:
    * Any info on how to restore using Time Machine with no installation disk
    * Reasons for or against upgrading to El Capitan
