How do I go about getting a job in the cafe industry as a barista ?

I have experience in the retail sector with my most recent employment bring in Penneys. Is there training courses I should complete before applying for jobs ?

If any here works in a cafe or owns a cafe I would love some advice.

Do any of your friends work there? Ask them to put in a good word for you. That's the best way.

Suppose if you took an online barista/coffee course, it would look very well on your CV (yes those courses actually exist).
Assuming you have a passion for coffee and hence why you want to work there, if you can show that during an interview along with a CV showing customer facing experience, I should think you have a very good chance at employment.

I know insomnia at the jervis street luas stop has a sign looking for trainee baristas. Honestly you will probably be earning less in these cafes than Penneys. If you are looking for a decent place to be a barista try one of the artisan coffee shops like Coffee Angel etc, 3FE, etc. These are places that actually care about coffee and are experts on it. Getting a coffee from coffee angel is completely different to watery over roasted mug of something from Starbucks.

I would speak to the coffee shops before even thinking about a training course. I imagine they are like a "bar tending" course. Barista is very much on the job learning and apparently you can pick it up within a few hours.
