    Any suggestions.

If it's at home, probably looking for one night if in Ireland (Hotel, evening meal, breakfast) in a nice hotel.....

If it's away, probably a two night city break.

You're not exactly giving us much to work with!

    Budget?
    Just chilling or sight-seeing?
    Activities?
What part of the country do you live in? Not much point suggesting a hotel in a town where you live.

I really liked Monart, if you're into the Spa thing it could work.
Cliff House Hotel near Dungarvan is lovely too.
The Lodge at Ashford Castle is great.
