What's with these sharp and sudden fluctuations in temperatures? Like one day It would be freezing cold 1c, and the next day it would be 12 or 13c and it's the middle of December??!! What the **** is going on?

One word...zonality. Or, if you want two words...polar front.

Basically, what's bringing us the bands of rain is a front that separates warm and cold air. When the front moves south of Ireland we get cold air and when the front moves north of Ireland we get warm air.

Cold front warm front, we have been in the middle where 2 air masses are meeting, cold north west polar air and warmer south west Atlantic air.

One day last week we had Cork @ 13c and Donegal @ 1c

Shouldn't we have more thunder storms being stuck in the middle of warm and cold weather?
