I'm looking at these flights to Orlando for the summer.

    Link

Has anyone booked this route before?

Does checkin baggage carry through to Orlando?
Is 1h50m in Gatwick enough time to make the connection?
Does eBooker do this as a single book or is the DUB - LGW and LGW - MCO considered two separate books?

probably 2 separate tickets as I can't see VA and BA interlining in which case 1hr 50mins is not nearly enough time as you will need to retrieve bags and check in with VA.

all depends on how ebookers sells the ticket.

If it's Aer Lingus to Gatwick and Virgin to Orlando it will be on the one ticket..

They do have an interline agreement in place, so Aer Lingus will check your bags through to Orlando

Just on that, I flew to the US last month, via Heathrow, with the first flight being BA and the trans-atlantic flight being VA, and everything was checked through the whole way from Dublin.

Be aware though that returning home from MCO-LGW with VS will require you to exit security into arrivals and re-enter through security again before your LGW-DUB flight.
