If someone has been previously married and has already submitted documents to court in their married name. Then if they remarry some years later, do they use their new name or do they use their old name on any newly submitted documents?

Given the potential importance of the matter, they should speak with their lawyers. It might be as simple as adding a note to the file and attaching the marriage certificate, deed poll, etc.

If one marries, one's name doesn't automatically change. A person's name is what they calls themselves.
