SO I'd a tooth out last Saturday week, and had a stitch put into the hole/wound which was supposed to dissolve.

Come last Thursday, the stitch was chafing against my gum, and I took a nail scissors to it and pullled it out as it was causing me a lot of pain.

SInce then the wound has been healing well, and is getting better every day, but is still not fully healed.

Would this be normal in those circumstances?

Assuming you are fit and healthy and have no condition that could complicate healing. What you describe sounds normal. After an extraction the socket fills with granulation tissue and over time the hole fills in with new bone , over time the hole will get smaller and disappear. Depending on where it is you will notice it less and less.
