I'm over here for 11 nights. Going to try and fit in a few days to Shenzhen and China as well.

Anyone have any recommendations on where to eat/drink, what to do etc.

    Cheers

    Visit The Peak
    The Buddha Statute
    Symphony of Lights
    Flower and Bird market
    Avenue of Stars
Relax on the beach. Good few around
    Day trip to Macau

Just few from the top of my head.

The Peak would be one of mine too and a boat ride round Aberdeen harbour.

A night race schedule at Happy Valley is a must. They were on Wednesdays when I was there.

Disneyland if you're into that kind of thing!

Go for a hike; something like half of Hong Kong is national park.

Visit the Austrian city of Hallstatt - recreated near Huizhou. Two hours on the bus from Hong Kong (Prince Edward station).

Go to a football game in the national stadium.

Go for afternoon tea in the Peninsula Hotel on Kowloon.
Also the night safari in the zoo is great fun.

Agree with everything that has been listed so far and would add dim sum in Jumbo King Floating Restaurant. Yeah it's touristy but for me it was a must see/do! :D

    Cheers lads.
We're off to Shenzhen for a couple of days. Then back to Hong Kong for 4 nights and going to head to Macau for 2 or 3 nights.

It's mad over here, thanks for the replies

    .

better still .. stay in the Peninsula and get an airport transfer in one of their Rolls Royces. Very pricey but if you want a treat it's worth it.

    Dim Sum in City Hall
Goose in Yung Kee (plus hundred year old egg if you're ambitious)
Cross the harbour at night on the Star Ferry
    Go up the Peak
Go out to Stanley (south side of the island)
Walk through Causeway Bay at night - especially eye opening if you are tall.
    Order some shirts in WinGuide
Order a suit from Bonnie & Johnny at Yuen's in Escalator Link Alley
Go to Lan Kwai Fung at night and hang out with the expats; afterwards, allow one of the Indian Elvises to direct you to dinner in Rat Alley/Wing Wah Lane.
Have the buffet at lunch on Thursday at the Mandarin; check out the Chinnery (Irish expat artist in 1840s HK) Bar
Have an evening or weekend buffet at the Shangri La
