Anyone recommend a place to eat Sunday evening Salthill after 7? Are places open? I see gourmet tart is closed early veggy option needed as well!

You could try the Black Cat for Spanish/tapas type food http://blackcat.ie/ or Lana for "Asian Street Food" http://www.lanathai.ie/. Both worth a visit and both have a number of vegetarian options.
