2015 Cooking Club Week 29: Lazy Girl Chocolate Cheesecake

    Firstly thank you all for waiting on me! Not only is this great for lazy people like me, it's also still quite easy to make after you've caught your hand in a door at work! :D

    Ingredients
    Base
    250g of choccie digestives
    100g of butter
    Filling
    200mls of single/whipping cream
    300g of full fat cream cheese
    300g of your favourite chocolate (I used two pound shop toblerones!)

    Step 1 - Line an 8'' lose bottom tin with cling film. I wrap the base then place a few sheets across the collar then just push it down.

    Step 2 - Throw your biccies in a bag and batter them! You could do this in a food processor but I havn't got one so a tescos bag and a rolling pin did the job.

    Step 3 - Melt 100g of butter and slowly mix in with the crushed biscuits (which have been taken out of the tescos bag :pac:)

    Step 4 - Mix until the butter is evenly dispersed throughout the crumb. If it looks very wet, scrunch up a few more biscuits and mix them in.

    Step 5 - Squash into the tin as best you can using the back of a spoon and pop into the fridge.

    Step 6 - Lightly whisk your cream until it stiffens. In another bowl beat your cream cheese until is it fluffy. Mix them.

    Step 7 - Melt your chocolate of choice (I used both toblerones but help back one triangle for decoration) and mix in with your white mix.

    Step 8 - Pour onto the base (which only needs about 10 minutes in the fridge to harden it up a bit) and leave overnight!

    Step 9 - Have some for breakfast the next morning because you've been waiting for it since last night!

    This is a similar recipe to the one i use. Its very easy and one that people will ask where you bought it from. It really is that good.
    Terrys chocolate orange works very well too! Theres also a new milky bar with cookies out. Was thinking that could be used in my christmas cheese cake.
    Ill give this recipe a go next time im doing one and report back.
