    Just a questions. What are the affects of a barman turning up the gas while pulling a pint? Why is this done?

    I have noticed Guinness do not have this option. Why is this !

    It's mostly about head-formation, AFAIK: more gas means more foam. I guess because the head on a nitrogenated beer is more stable (because air is mostly nitrogen) the likes of Guinness don't need the same fine tuning.
