Mora, stainless or more expensive the carbon steel blade. I have both and each will hold a hair shaving edge.

For something more compact try the Opinal range, another inexpensive knife that takes and holds good sharp edges.

    Try "Buck" knives.
I have a cheap one and it does me fine for the old bunnies.

Also the Mora, and the Opinal range are under €20 so you won't cry when you loose them.

I have 3 or 4 Mora Frost and about the same in Opinal, 3" blades. Carry at least 3 on me into the field and into Tesco's when I forget to leave them in the van :eek:

Victorinox make good butchery knives from about 15 euros - the deerhunters love them. Opinel are very easy to sharpen.
