    Hi there.

    Does anyone have a tried and tested simple recipe for shortbread?

    I do 1:2:3 of sugar:butter:flour. 40g:80g:120g gives me about twelve biscuits.

    Heat the oven to 160°C
    Cream the butter and sugar.
    Mix in the flour.
    Get frustrated that it's all crumbly.
    Mash into a log shape.
    Chill for 20 mins.
    Slice off biscuits.
    Bake on parchment (or I use silicon sheets these days) for about 15 mins till pale golden.

    Sometimes I do half horlicks half caster sugar for a malty shortbread. All icing sugar leaves a more tender biscuit. Sometimes I mash in chocolate chips.

    In order to get a proper tender shortbread, a proportion of the flour should be gluten free (corn flour or rice flour) but I rarely have non-wheat flours to hand.
