Loft in Garage

I'm putting in a room above the garage. I have sheeted the floor with 18mm 8x4 WBP. Next will be insulating the walls and roof. The garage walls are about 4 1/2 - 5 foot high then the roof is about 8 foot from the top of the wall to the center of the roof. There will be storage space on each side this can be accessed from a door in the loft on each side.

I'm thinking of using either rockwool, 8x4 sheets of insulation or DIY foam spray. not sure about the spray as it colud be a better job but too expensive. If I was to get 8x4 sheets what thickness in recommened ? and also it would hold better on the walls as I assume the rockwool would have to be stuck/stapled to hold it onto the walls. I want to keep the cost down and the room is onlt going to be used i few times a year maybe be heated with a stove.

    Planners usually don't allow this.
    Hope your neighbours are nice.

This really is a job where insulated platerboard would work well.
You have the line with plasterbord anyway to finish so do both insulation and plasterboard with one hit.
Leave the joist and rafter spaces unfilled and well ventliated.
Don't go chasing U Values you don't have to for this one. 50mm max insulation.
