The dates on which you take holidays are at the discretion of your employer, they actually are doing you a favour by not forcing you to take this as part of your holiday leave, you can save it for another time that may suit you better. They could just force you to use up one of your leave days.

I'm unable to take it as annual leave as I do not have any holidays left at the moment until I work up more, leaving me in a tricky situation! I do not want to work a 6th day the following week!

Perhaps take it unpaid then?

There is nothing in law that will require your employer to pay you
