homemade pastes

    Hey all,

    Just wondering have any of ye had experience with freezing homemade pastes( randang, massaman, red curry etc)

    Do they freeze OK, or is it nasty?

    I freeze Rendang, laksa, chilli & lemongrass pastes. The flavours are not a bright after freezing, so I add some fresh aromatics as I'm cooking the dish. A couple of sticks of lemongrass or a few fresh lime leaves will lift the flavours.

    I use lemongrass puree so just a touch of that will help?
