How would this work?

My current insurance policy expires at midnight on saturday night. I've already gotten a quote from another company, paid them, been sent the proposal form and returned it along with my ncb cert and received my new disc & insurance cert this morning.

If I was to have an at fault claim between now & saturday night, how would it affect my new insurer's? Naturally the current crowd would have to pay out as I was still under their cover, but would I be obliged to inform my new insurer's of the accident?

It wouldn't as you provided the correct information at the time you took out the policy. It would only effect you next year when you renew again.

That's what I thought, but at renewal time wouldn't they send me out my full ncb certificate, since the claim wouldn't be on their records?

You would have to inform them.
If you break it down, you have told them you have a full no claims discount and you have sent them a cert saying this. If you have an accident/claim, this invalidates the NCT and cert so technically you are lying to them.
If they found out this during your year with them they most likely would cancel your insurance
