Help with picking a new bike size

    I am due a bike change/addition so I have been looking online.
    My current bike is a 2012 Cube agree gtc pro size 56.
    Here is the sizing on it from Cube:

    Now I got a bike fit done and he said the bike top tube was a bit long for me and swapped the stem to an 80mm.
    Here is what he done to the bike and its comfortable.

    I went to competitive cyclist and put my measurements into their bike fitter.

    I do not race, I do club cycles and a good few sportives.
    I have been looking at a Trek and also at Canyon online.

    Look a nice bike, my price range is up to €3K and I want shimano on it - so either 105 or ultegra.
    Any have an Enduarance ? I would like something that gives comfort first then speed.

    Any can one help with my size in a Canton / Trek ?
