My friend who is from Meath has an Irish license but has bought a car from the North as she intends to drive from Armagh to Dublin everyday for work. The car is registered to the Armagh address in her name, does she need to update the address on her license or apply for a UK license?

    No.

But it would be handy to have some kind of proof that she is resident in the north which she could carry with her at all times.

Nope, full Irish licence is valid in NI until it expires. See here.
It would be worth her while to keep some proof (eg. tenancy agreement, bills, UK tax cert, etc) of her NI residency in the car in case a Garda or Revenue officer stop her and seize the car on the spot. It's generally illegal for an Irish resident to drive a foreign reg car in Ireland so unless she can convince them she's resident in NI she could be in bother at the roadside.
