IF you can get it in before end of September (maybe early October, depends on what day of January its up) you should be able to get a 2 year cert from that date (test date).

Yep, a 2 cert if issued more than 90 days early.
    http://www.irishstatutebook.ie/2014/en/si/0322.html
    (3) Where, following a voluntary early test, a test report is issued in respect of a vehicle, other than a new vehicle, showing that all the items specified in Schedule 3 applicable at the time of the voluntary early test and tested in respect of the vehicle are satisfactory, the test due dates for such vehicle are—

    (a) where such test report was issued on, or not more than 90 days before, the tenth anniversary of first registration of the vehicle, each subsequent anniversary of the tenth anniversary of first registration of the vehicle, and

    (b) in the case of a vehicle not referred to in subparagraph (a)—
    (i) until the tenth anniversary of first registration of the vehicle, each subsequent biennial of the date such test report was issued
    , and
(ii) from the tenth anniversary of first registration of the vehicle, each subsequent anniversary of the date such test report was issued.

How can you change date on it? Thought it was from date of first registration. Passed mine 2 weeks ago, 1/1/17.

Voluntary early testing was introduced in 2014 and means you no longer have to wait until 90 days from expiry, you can now book the test for any earlier date. However you have to pass your test more than 90 days early in order for the cert to expire on the anniversary of the test date instead of the anniversary of first registration.
