You're not comparing like with like here. The Cube is an ALU framed bike and the Giant is carbon aero bike. Closer to the Giant would be the Cube Agree at €1299: http://fitzcycles.ie/p/1560/cube-agree

Or the next model up of the Cube Agree at €1699 which has full Ultegra: http://fitzcycles.ie/p/1561/cube-agree

Yeah I know its not a fair comparison. I am trying to justify paying an extra 700 for a bike. I guess what I am asking is would you think the cost of the Giant vs the Cube is fair. Would it be worth the extra money?

But it depends. If you need/want full carbon then forget about the Cube. If you want/need the best bang for your buck and don't need carbon, then forget the Giant.

Once you decide what your priority the guys here will be better able to give you advice on what alternatives there are.

I own the 2014 version of the Peloton Race and I'm very happy with it. It was my first road bike though so was at the upper end of what I was willing to spend. My next bike upgrade will likely be carbon with full Ultegra which I feel I can justify now with the mileage (kilometreage) I am covering (5k kms already this year).
