You MUST ALWAYS have car insurance on any car you drive on a public road, whether you're driving it 250 yards down the road to your neighbour's house or 250 miles from Cork to Belfast, whether you've had your licence/permit 15 minutes or 15 years.

An ADI (Approved Driving Instructor) teaches you, and you must complete a minimum of 12 lessons with him/her. You are automatically insured on his car for driving lessons and if you rent his/her car for your driving test, the cost of insurance is effectively included in the cost of the lesson/rental.

A Sponsor is someone who has held a full licence for 2+ years and accompanies you while you practice between driving lessons, he is not actually 'teaching' you as such, and YES you need insurance on his/her car, unless you're practicing off road (I am open to correction but to the best of my knowledge no Insurance is needed off road?).

I don't believe having a Sponsor is compulsory but it is recommended, however it is compulsory to take at least 12 driving lessons with an ADI before doing a driving test.

Just to add, I know you haven't asked, but in case you live near the border, your learner's permit is only valid South of the border, if you drive in the North before passing your test and getting the physical full licence, you are driving without a driving licence.
