When you take off the rear wheel always put the chain on the 'smallest' outside sprocket and then place the chain on the same sprocket when refitting the wheel.

The chain should not then 'jump' .

1 click of the lever from there should change gear. If it doesn't you need to tension the cable by turning the adjusting barrell at the rear of the derailleur a quarter turn anti clockwise at a time until it does.

I'm running 105s. I've taken the back wheel on and off over the last few weeks for various reasons and not had a problem with gears jumping. Assuming you put it back on the right cog it should just work.

Did you put the wheel back on with much force? That could have cause the derailleur to come out of alignment with the cog if you knocked off the derailleur or pulled on it.

Might be worth re-indexing and then re-sit the wheel again and see if the problem persists.

You might have bent the rear dérailleur hanger and this could be the problem with skipping gears

It shouldn't happen so something is amiss. I've 6800 and have had the rear wheel off several times without a problem. Like said above check the RD hanger alignment.
