Seal damaged wood counter with Epoxy?

Hi - I've a Belfast sink with a Rubberwood countertop. The countertop around the sink is getting badly water-damaged. I have some spare epoxy resin from another job and I was thinking of cleaning and drying the wood as best I can then sealing it once and for all with the epoxy. I used the epoxy to seal a boat so it's extremely tough and waterproof - just seriously smelly while setting. Anyone ever tried this or any reason why it might be a bad idea?
