Where are you in Munster? I can already recommend you two in Thurles, Co. Tipperary.

CM Signs - I got signwriting from them for a rally car of mine. I fitted them on myself, but AFAIK they can do it for you too.

Digi Signs (Helen Boyle) - A lot of business' get templates done by her and they usually go to her. My uncle went to her with a Transit Connect van and she done a great job. Highly recommended.
