I thought that - so it must be the autopilot controlling them during the flight?

Yes, the A/C can be manually trimmed by manually turning the trim wheels or electrically by operating the trim switches on the control column through an electrical servo motor or automatically through a different servo motor whenever the autopilot is engaged. It physically repositions the angle of the horizontal stabiliser.
