    You can't change the epg on a sky box. You can hide unwanted channels.

    Not sure if the Sky+ box in Ireland is the same as the Sky+ box here in Germany, but the first 100 positions are reserved for favourites, so you can copy up to 100 channels and put them in whatever order you want and they will appear at the start of the EPG. It's a kind of workaround for sorting.

    Looks like it's not the same. We can add favourite channels and these are available from a different menu, but we can't hide anything. It's a pity because that would be a brilliant feature.
