New floor in old bungalow

    I am renovating an old house and need to go down a few inches deeper in order to put in insulation and a new flowscreed floor. The tolerance is tight enough and the flowscreed will only be 60 mm thick. The house is almost 80 years old. A new 3 inch screed was put in in the 80’s and I have this mostly out.Thing is, removing all the old screed broken bits and pebbles is time consuming and still leaves lots of little jagged pieces which could puncture the dpc.
    Then, beneath this are large stones in a sand/earth mix. These can mostly be left in place, however some corners and edges are high but the stone is granite so I usually end up taking out the whole stone. This in turn leaves a large cavity. What should I fill this with? The finish should be fairly even and level for laying the insulation.
    There must be an easier way of doing this or am I missing something.

    the screed will be in over the insulation 60 mm only and as its flowscreed it will need a sheet of plastic over the insulation to prevent it running between it. The finish before I lay the insulation must be fairly even as the flowscreed is such a tight tolerance and is mostly self leveling. So if I am say 10mm higher at one end od the room it will mean 10mm less screed if you follow my drift.
