I've just finished Stepping Stones, which is a book of interviews with Seamus Heaney, as well as Herzog on Herzog, with the the filmmaker Werner Herzog. I never thought the interview format would be something that I'd get so pulled into, but I loved both of these books. Good questions, giving fascinating people a platform to speak about their ideas. Can you recommend any more?
