Cashel would be the "in between" town on route from Fethard back to Tipp. Plenty of places to stay, Baileys Hotel gets good reviews, plenty of B&Bs too and nice town to walk around- Rock of Cashel, etc. Other option is to get to Tipp town altogether and stay in Ballykisteen hotel. As you say, things will be quiet in either place on a Tues night but bit more "life" in Cashel with it being more of a tourist destination.

Cahir House Hotel might be worth a call or a visit to their web site. The cross country route from Fethard to Cahir is straight forward enough. Clonmel Park Hotel might also be a reasonable option.
