Re plumbing older cottage

Hey guys, looking for advise. Purchased a 19th century cottage that is a total gut. Have a couple of questions regarding plumbing.

    1. Is there any reason that I can't take the cold water from the main to a manifold and then direct feed the two bathrooms and kitchen individually?

    2. On the hot side, I want to direct feed to the heat source (undecided now but either electric point of source or gas condensate heater) and then the three rooms? My intent is to eliminate the cold water storage tank in the attic and the hot water storage tank (currently in the hot press).

Any thoughts or suggestions would be greatly appreciated. I understand eliminating the storage tanks will mean not having any water if the main was cut off. Does this often in rural Ireland?

Whats the source of the water in the cold water mains into house?

How much lead pipe is in this supply loop?

Hi, the source is group scheme. There will be no lead pipe used. Will be using Pex throughout.

Check to see if group scheme allows such a setup,
the led pipe question was to see how old the existing pipe work was.

    Whats the wall construction?

Will you be using matching lime based materials and not gypsum based?

The wall construction is stone with a lime render. I am not touching that, just repairing where needed with lime.
