I have a leak on my hot water tank. Is it ok to turn off the solar panels on a hot day. Just don't want the liquids getting too hot . The panels are showing a temp of 147 deg on the recirculation pump. Prob cause the tank is empty .

If you do the collector will stagnate and you will have problems. If you had a by pass installed you could just divert through this. Best option is to cover the collectors to prevent over heating.
If you are replacing your cylinder you will need to drain down anyway so why not do this now? Replace Glycol with decent high temperature version and/or fit a by pass since you will have the opportunity.

Is the cylinder stainless steel on a well water supply out of interest??
