Which one would you prefer to do?

To answer your question: probably software development, depending on your speciality.

Electrical instrumentation is more of a trade, right?

Could you do electronic engineering in college? Maybe hits both topics.

I am an electrical and instrumentation engineer working in a design role for an engineering consultancy. Most of the work I do is within the pharmaceutical sector, but I have also worked in the semiconductor industry and renewable energies. There is a lot of work in this area at present.

I must ask though, what is life like as an Electrical and Instrumentation Engineer.

    Busy :)

    I find it fascinating.

My working day is rarely less than 9 hours (not including lunch) but it passes in a blur. A typical day can be anything from design, cost estimates, a bit of project management, commissioning, scheduling, tender negotiation, generation of data sheets to technical bid analysis.
