Defrosting chicken

Hi everyone, on Friday evening around 5pm I took some chicken fillets out of the freezer and put them into the fridge to defrost.
Then yesterday around 6pm I was going to cook them but the didn't look fully defrosted so I left them in the fridge (unopened).
My question- Is it safe to cook the chicken fillets today even though they've been in the fridge defrosting for nearly 2 days? Thanks :)

I'm afraid food safety questions are not allowed here in case we get it wrong!

The usual quote they give is 'if in doubt, chuck it out!'
