brewing beer using wine yeast

    Can it be done? More of a curiosity than anything else. I have a few leftover packets of wine and champagne yeast lying around the house from when I was making mead. Would it convert the malt sugars?


    I would imagine it would give off fruity esters that might work in Belgians but maybe not work in Ales


    I am planning a brown ale this weekend so maybe I'll split the batch as an experiment

    It'll work but it won't be as good as it should be. Wine yeast can't digest maltotriose and will produce different esters as well.

    I've had Kasteel Cru "champagne beer" but I think it was just conditioned with wine yeast. Wasn't that good either.
