Enigma and how they decided which info to use?

I watched the recent movie on the subject and one part I found interesting was the discussion of not using all the intelligence straight away. Now im sure the movie account wasn't meant to be completely accurate. The film has Turing and the spooks holding back info, and coming up with a statisical way of revealing info so the Germans didn't get suspicious.
What was the real way they went about this? Was Turing involved with this part ? Or was it the military or the security service?

    They used various means.

One thing they tried to do was 'triangulate' Enigma (BIGOT) information with other sources such as signals, human intel, photo reconnaissance / interpretation (PR & PI) etc so they'd have more than one source.

Or use the BIGOT info to steer other intelligence gathering ops that - lo and behold - would discover things! For example, the top bod at the British Central Interpretation Unit (later the Allied Central Interpretation Uni) had access to the BIGOT info which helped both steer PR & PI efforts and also helped make sense of, in some instances, features or artifacts the photo interpreters picked up.

A lot of this was handled through the Joint Intelligence Committee which acted as the clearing house for operational intelligence.
