A group of four of us setup a website, the domain at that time was registered in one of our personal names. The individual whose name it was originally registered to has left the group & want's to hand over the ownership of the domain to the remaining three.

What's the procedure for doing that? Can the hosting company it was registered with do it for us?

Can it be put in all of the remaining three names or does it have to be one name or a company name?

There's usually a control panel of some sort provided by the domain registrar you used. In there you'll generally find tools to change:

The Registrant (generally the domain owner)
    The Tech Contact
    The Admin Contact

You should be able to do it yourselves and change the contacts to whoever you prefer. Once this is done it is probably worth changing the password so it is only known to the active individuals.

This process may get slightly ore complicated if the original registrant has other domains of his/her own in the account.

The process will depend on the domain extension
If it's a .com - via registrar control panel
If it's a .ie - you'd need to liaise with your registrar
.eu and .co.uk - have their own processes

You generally cannot have a domain in the name of multiple people
