I've got 105 - 5700 shifters and need to get new calipers, are the 105 - 5800 calipers ok to use with the 5700 shifters ?

It does say "Must be used in conjunction with ST-5800, ST-6800 or ST-9000 STIs for correct leverage ratio"

Can anyone advise please, will these actually work ok.

Yes they will work, in fact you can mix just about any brand of levers and calipers and they will all work to a point. The ratio of pull mentioned is the 'ideal' set up, but don't let that put you off, there will be negligible differences between the different 105 calipers.
