When shifting up gears do I pull the brake lever the full way or just till I hear one click? the lady in the shop said to pull it the full way, but when I pull the lever the full way it seems the gears jump way down 3 or 4 gears? is this normal?

Just a slight pull should allow it to move one gear and as you said until you hear or feel one click

Small pull for one gear, large pull for 2 gears. It's handy to have the choice.

Depends if you're talking about shifting the back or front. Shifting rings at the front requires more gumption.

One click= one gear. Up or down. Do not pull the brake lever as you will end up on the road face down. Right hand lever can be switched vigourisly but the left operating the front Mech must be caressed. There is far more chain travel here so it us very easy to drop your chain if changed in panic to quickly.

A long throw of the rear shifter will shift the chain up the cassette 2 or 3 gears depending on how far you move the lever. Vey handy when traffic lights stop you in a high gear. Just change up a few sprockets while coming to a stop.

FWIW, Claris does similar but only changes 2 sprockets up rather than the 3 of 105.
