We have a number of cabinet door stays (they 'should' keep a vertical cabinet door open) that are no longer working. They are like the ones in the pic here:

I fried fiddling with the hex adjustment in the middle to no avail. Is there a trick to getting these working again?

I have vertical ones as well, spring loaded and gas struts and they all stop working after a period of time.
Try opening the hex nut and see if you can pack the friction washer with another one like a plastic washer made from a milk bottle wall.
A little more friction sometimes works.

Their is 2 hex bolts its the big one you adjust their should be a + and - on the big hex one clockwise will tighten it anticlockwise should loosen it. You just keep tightening until the door stays up.
