Cafe Paradiso is a good option and I got a nice bean stew in the Bodega last week (available on request).

If you go to the 'Eating Out' section on The Irish Vegan website they link to a great list of all the vegan and vegan friendly places in Ireland too :)

The Orso, market lane, blackrock castle group have vegan options, and a lot of the stuff on the menu can be made vegan if you ask.

Iyers, Quay Co-op and Cafe paradiso are the three dedicated vegetarian restaurants in the city, all three do vegan options.
