Need to change both cars - help!

Hi there I'm in the same boat as a lot of the- three kids to a car people, but with a twist.
Currently we have a qashqai and an rx8 Believe it or not though the rx was very practical for two kids - two isofix points in the back. Obviously for distances we used the qashqai.
Now we to fit three car seats in back for 5 year old 4 year old and baby. With a change in job I will have to do much more mileage and just can't stand over the rexys poor fuel economy.

I was looking at the Kia Carrens or the Ford Galaxy for the family car.
For the car for work a mondeo diesel? Is there any high fuel economy saloon that will take 3 car seats.

What are you looking to spend on each car?

A Mazda 5 or Corolla Verso would be nice choices for a family car carrying 3 kids. The Corolla can very easily take three child seats in the rear without much effort due to the low, flat seats. And the 5's sliding doors can make getting kids in/out of the car a helluva lot easier. Both cars are built on the same chassis and are quite reliable.

Am I reading that right, or can you convert a 3 seat rear bench into seats for 4?

How legal/safe is that?
