I've entered twice on IEC visas using a one-way flight (once at Toronto Pearson and once at St. John's) and there's no problem as long as you have your health insurance and proof of funds. You might be asked for your address, in which case a hostel or friend's address should be fine. They might also ask what you intend to do in Canada, as long as you have some kind of general plan e.g. "I intend to work in construction" you're fine.
