Been asked by Dole Office to get P.45 (Amended Certificate) to cover additional time I was working to the one that was initially provided to me & submitted to them by me.

Trouble is we're dealing with cowboys here.

Have contacted them by email, phone and text since Dole Office requested additional information.

They've said if they don't have it by Monday I'll be cut off.

Any ideas? Have tried my best to obtain it.

You could try revenue.

Call revenue. They'll issue a P43 on the cowboys (its so common there is even a standard form for the situation). Even Jesse James gets nervous when revenue come knocking.
