    Where does one go to qualify in a chef these days & what sort of duration are courses for mature students?

    There's lots of ways. FAS/Failte Ireland is probably the easiest way to start.

    Failte Ireland was the old way to start learning how to be a chef. But from looking at their website for the last 5 minutes I don't even know if they do it anymore :confused:

    But good advice is to take Failte Ireland/FAS as stepping stones to become a chef.

    DIT Cathal Brugha do a full-time course in Professional Cookery ......... but ideally you'd get a Junior Commi Chef job and do the Professional Cookery course part-time as you can't beat hands-on real world experience when learning the trade.

    Be warned it's hard work for low pay for most/all of your career .......... unless you are the next Jamie Oliver or Gordon Ramsay!! :)

    ps The whole process of getting qualified will take 3/4 years depending which route you take .........
