Would an honours degree be worth more to someone than the equivalent amount of time of work experience ? Or would the experience be more valuable ?

depends on the job your going for but if you have 4 years experience in a role then thats generally far more beneficial to the employer than a 4 year degree.

Experience and good references all the way.

But what if its 4 years work experience and a degree vs 3 years work experience and an honours degree. As in going to work after getting a degree rather than continuing on to do an honours degree. Will the academic qualification be more beneficial to have in the long run than the extra years experience ? Or will getting into a job early always keep me one step ahead of those who spent that year in college ?

Again its in general but experience is key.
The degree will only come into it for graduate jobs. After that as krissovo says its experience that counts and more so references.

So if you can get a good job based on your ordinary degree then I think the job, assuming it has good prospects, is more beneficial as there are a multitude of options to complete degree and or masters part time.
