Anyone willing to give a look at letters of application and CV in order to edit or offer suggestions?

I think anybody worth their salt would have to talk to you as well as read the application/CV - while one can review a CV and improve on format, syntax and general content, it is hard to know whether it reflects your true extent of skills/expertise without talking to you about your job experiences directly. A good exercise is breaking your working day down task by task and looking at each task and identifying what skills or what knowledge you had to use to execute that task. That is how 'I worked in a shop' becomes 'developed customer service skills, cash management skills, organisational skills' etc.

Recruitment agent asked me for specifics of what I did in most recent job. So I've sent her bullet points. My nice piece of prose would describe my job more elequently lol

These are my (under duress) bullet points
    Opening the office
Banking for the partners - aka - writing and lodging cheques. Signatory on Office a/c.
    Customer satisfaction
Utilities contracts - All office contracts - included negotiation of contracts and monitoring of SLAs etc.
    Handling of complaints
    Responsibility for paying all invoices.
Dealing with most difficult customers - complete customer service of certain clients.
Ensuring office was clean, inviting, staffed etc.
Supervising Legal interns. Included training and management.
Bringing the practice into the 21st century in terms of filing and virtual office systems.

I would say its just better wording needed.
Maybe "Key holder and responsible for office opening security checks" rather than "open office", sound like more responsibility and probably isn't far from what you actually do. Someone else could probably word that better again, but you get the idea.
The same could be done for everything on your list. It is very vague and although we could infer a lot from your list, you really need to spoon feed the information you want to present to prospective employers.

My description on my CV doesn't really mention any of the tasks in detail.

This is what I have on one version.......

    • Office Management
    • Administrative support to both partners, including Reception
    • Preparation of Legal Documentation
    • Communication & Correspondence with clients, prisons, solicitors, barristers, court officials and The Department of Justice

I'm probably not the best person to advice on this, but have you looked at recruitment adverts for positions you would want and tailored the information on your CV to cover the adverts "requirements".
An advert from a recruitment agency are normally good, as they contain a huge amount of BS, but that's the BS that employers want to see.

So what I'd deduce from your post Sclosages is:

    1. Office Management
    - Opening the office
    - Ensuring office was clean, inviting, staffed etc.

    2. Day to Day Management of Company Expenses, Contracts and Contractual Agreements.
    - Responsibility for paying all invoices.
    - Banking for the partners - aka - writing and lodging cheques. Signatory on Office a/c.
    - Utilities contracts - All office contracts - included negotiation of contracts and monitoring of SLAs etc.

    3. Customer and Client Care Management
    - Dealing with most difficult customers - complete customer service of certain clients.
    - Customer satisfaction
    - Handling of complaints

    4. Legal Intern Supervision and Training Manager
    - Supervising Legal interns. Included training and management.

    5. Client and Company Data Management in line with xxxx Standards and Best Practices
    - Bringing the practice into the 21st century in terms of filing and virtual office systems.

You could fluff it up a little, doesn't mean you would be lying. I could refer to myself as a Legacy Data Analytics and Reporting Tool and Server Migration Specialist, but that doesn't detract from the fact that it's a fluffier way of saying I'm a Software Engineer tasked with Migrating a Management tool to a new server.
