Thinking of starting a business & would need someone to help part time
It could be a day this week, 2 days next week. none the following etc
Would I need to get them to sign a contract?
Whats the best way to go about hiring them?

You need to provide a contract, otherwise an implied permanent contract exists after two months.

It sounds like you'd be offering a zero hours contract.
