With Ryanair, even though you click "return", what you are doing is booking two separate flights.

There's no problem bringing a bag on only one leg of a journey - I've done it. Can't remember the exact mechanics of it but if I could manage it anyone can!

Yes, I have done it a few times before. If you have already booked your flights you can still add checked luggage if you have not done your online check in yet.
Go to manage my booking option on website.
